I assume videoconvert doesn't support converting images to video or it would be in the demo, as it seems to me it would be one of the most common use cases.

I tried running this. Not sure if it's correct.
-r 60 -f image2 -s 1920x1080 -i input.jpeg -vcodec libx264 -crf 25 -pix_fmt yuvj422p output.mp4

Output:
