/api/v1/instance example is missing configuration[accounts]

In Mastodon 4.0.0 there was an accounts key added under configuration for /api/v1/instance and this was simultaneously deprecated for /api/v2/instance.

The docs were updated to add the information about the new accounts key, but the example JSON was never updated to display it.
