In this case I'm leveraging grunt-contrib-watch to watch Gruntfile.js.

Instead, Gaze watches Gruntfile.js and every subdirectory of Gruntfile's dirpath. I don't understand why.

Certain versions of gaze need to watch folders to check if files get added to them that match the pattern you've indicated. It should only watch the immediate folders in the directory and not all subdirectories.

For instance if you had the pattern **/*.js then later added foo/bar.js it wouldn't know you did unless it was watching the foo/ folder.

Indeed but if you only care about changed files, could the extra watches be
avoided?

Sure but it would be a ton of work for very little gain, imo.
