I added xcpretty to my gitlab ci build. I have strong suspicion that it buffers output and flushes only when buffer is full. I base it on the fact that that output "hangs" for long times and occasionally flushes a lot. When using in console manually it works more continuous.
Very likely it is the problem answered here: https://stackoverflow.com/a/21267609/1966790
So could you add STDOUT.sync = true somewhere? Possibly controlled by environment variable?
export XCPRETTYUNBUFFERED=1
... | xcpretty | tee log.txt
or
... | xcpretty --unbuffered | tee log.txt
